Hosted by Chef Yves Nicolier Sandrock in the historic village of Capmany, this journey invites you into the private world of Alt Empordà. You will walk through wild aromatic scrublands to capture the scent of the hills, step into the cellars of visionary winemakers to hear their stories firsthand, and share communal tables with the local people who define this landscape. From the precision of a chef’s tasting menu to the raw honesty of an open-fire grill, you will experience the Mediterranean lifestyle in its most authentic form.
Daily Program Orientation:
Day 1: The Soul of Capmany & The Chef’s Welcome
Arrive in the granite-walled village of Capmany. Your journey begins with a private welcome from Chef Yves Nicolier Sandrock: a Chef’s Choice Tasting Menu, where local, seasonal products are paired with wines that mirror the precision and elegance of the land. A perfect introduction to the "Km 0" philosophy.
Day 2: Heritage, Gravity, and the Mediterranean Scent-scape
We head into the wild to capture the landscape. Participate in a sensory walking experience to inhale the wild rosemary, rockrose, and pine that flavor the local terroir. Following this, we visit two estates: one defined by female-led technical precision and gravity-flow viticulture, and another that operates as a holistic farm where bees and sheep complete the cycle of life. Dinner is a Tapas Selection, celebrating the variety of the Empordà larder.
Day 3: Ancestral Fire & The Living Vineyard
Today we explore the philosophy of minimal intervention. Meet the owners of an ancestral estate where the vines are treated as part of a living history. After walking the granite soils, we move outdoors for a Traditional Paella Day. Cooked over a wood fire and shared in the open air, this is the ultimate ritual of local connection.
Day 4: Wind, Salt, and the Deep Blue
Discover how the proximity to the Mediterranean influences the glass. We visit a winery that views every bottle as a "vignette"—a small story of the land. In the evening, the menu shifts to the coast. Enjoy a Fish & Seafood Evening, where the freshest catch from the nearby ports is paired with saline, wind-swept white wines.
Day 5: The Wild Spirit & The Open Flame
Our final day is dedicated to the "honest" wine—natural, zero-intervention, and wild. We conclude our journey with a powerful culinary tradition: Local Meat Specialties grilled over an open fire. Surrounded by new friends and winery owners, we toast to the lasting "Llavors" (seeds) of the connections made throughout the week.
